I recently came onto the Visual Knife cuts Model and have to say, it's quite revolutionary! This approach provides something for everyone regardless of your level of cooking expertise—from professional chef to culinary student to just someone enjoys cooking.
For those unfamiliar, the Visual Knife Cuts Model is basically a manual with excellent images guiding correct knife cuts. It explores the right techniques, knife placement, and even how each cut influences cooking time and texture in addition to displaying the varieties—think julienne, brunoise, chiffonade, etc.). My veggie stir-fries taste so much better now; everything cooks evenly, and my plating looks fantastic.
